Sausage and Pepper Hero

It's suppose to be 75 degrees here in NY today. It's a bit cloudy but i'll deal with it. I just want some warm weather to stay! 

I love this sandwich. I really, really love this sandwich. The secret to this recipe is slow roasting the sausage and the addition of the roasted peppers. 

My Favorite Layered Salad

Tis the season for salads! Everyone wants to be thinner for the summer. I saw this salad on TV and fell in love. Let me just tell ya it did not disappoint  I had to  make a few adjustments but over all it was great! I hope all the mammies out there had a fantastic Mothers Day.

Chicken Breast with Roasted Red Pepper and Mozzarella Panini

How was everyone's weekend? Did you celebrate Cinco de Mayo?

We did minus the Margaritas. I made some taco burgers, chiptole sweet potato fries and a tex mex salad with chiptole honey mustard dressing which was my favorite part. Now on to the recipe. Back to my other love, Italian food. This sandwich is amazing breaded chicken breast, fresh mozzarella and roasted red peppers smeared with some pesto. Delish!
