Chowda baby! Can you believe I have never eaten or made this until now! What is wrong with me? Where has chowder been all my life? It's so good and so easy to make!!! I didn't know what it was even suppose to taste like so I had my taste tester check it out. Only thing he said that was missing was pepper. He pepper overloads everything so it may have just had enough.
Ingredients
1/2 cup diced bacon
4 medium potatoes, peeled and chopped
1 medium onion, finely chopped
1/2 cup finely chopped carrots
2 cups vegetable or low sodium chicken stock
3 cups cream-style corn
2 teaspoons salt
ground black pepper to taste
2 cups half-and-half
1/2 cup cheddar cheese
Directions
Place the bacon in a large pot over medium-high heat, and cook until crisp. Drain and crumble, reserving about 2 tablespoons drippings in the pot.
Mix potatoes onion and carrot into the pot with the crumbled bacon and reserved drippings. Cook and stir 5 minutes. Pour in the stock, and stir in corn. Season with salt and pepper.
Bring to a boil, reduce heat to low, and cover pot. Simmer 20 minutes, stirring frequently, until potatoes are tender.
Pour in the half and half mix into the chowder, heat through add cheese stir until melted. Serve hot!

















I also only just recently made corn chowder and I agree it's excellent. Yours looks so yummy that now I want a bowl! :)

DeleteYour chowda looks very tasty. Grew up on Chowda It was a staple in my house. Mother was always making soups, and Chowda That's how we say it in Maine. I add ground sage and a little parsley. I could go for a bowl of that tonight. Nice post Andi the wednesday baker. blogspot.com
