Pizza-dilla
I love pizza. I really really love pizza! I can eat it cold for breakfast. That's so wrong hence the carbohaulic anonymous meetings I need to attend regularly; if they possibly existed. My kiddies wanted something for lunch and they also love pizza and quesadillas so I threw these together quickly. They were good. I still prefer the real pizza over these. The kids enjoyed them and they were easy to make.
Ingredients
1 teaspoon olive oil
4 (8-inch) tortillas
1 1/2 cups (6 ounces) shredded mozzarella cheese
4 tablespoons parmesan cheese
1 cup marinara sauce
Heat 1 teaspoon of olive oil in large skillet wipe out excess with paper towel. Lay out tortilla and spread sauce on half of the tortilla layer evenly with cheeses, fold in half and place in skillet. Cook on each side until golden brown and toasted. Repeat with remaining tortillas, sauce and cheese. Feel free to add any other toppings you like.
